
Nettle Seed Moon Bites
These little chocolate bites are a favourite treat I often bring along to my forest bathing walks—a simple, nourishing way to weave a bit of wild nature into every sweet bite. With just four ingredients, they’re easy to make and full of earthy goodness. This recipe makes approximately 10-12 moon bites.
Ingredients:
- 100g dark chocolate
- 40g coconut oil
- 50g soft dates (pitted)
- Dried nettle seeds (or other delicious ingredients, such as coconut, nuts, flower petals, etc), for rolling
Method:

In a high-powered blender or food processor, pulse the chocolate into a rough, crumbly powder.

Add the dates and blend again until the mixture starts to come together.

Add in the coconut oil and blend once more—you should end up with a slightly crumbly, sticky dough.
Now it’s time to shape your bites. Scoop out small amounts and roll them into balls with your hands. You can make them any size you like, but I prefer them just smaller than a ping pong ball—perfect for a satisfying bite.
Roll each ball in dried nettle seeds, gently pressing to coat them evenly.
Optional:
If you’d like a smoother texture, gently warm the blended mixture using a double boiler until it just begins to soften. Stir well, chill the mixture in the fridge for about an hour, then shape and coat as above. Also, I sometimes add rose petals into the chocolate as well as mixed in with the nettle seeds – absolutely divine!

Harvested in late summer once they droop and firm up, nettle seeds are more than just a topping—they’re a gentle adaptogen, known to support adrenal health, boost mental clarity, and enhance energy levels. They’re especially helpful during times of burnout or seasonal fatigue.
